This sparkling sake is produced by a second fermentation similar to sparkling wine. With a moderate alcohol content of only 7 % vol, it is easy to enjoy. The base of the sake is a JunmaiGinjo. The Chiyonishiki rice variety was used for this and the degree of polishing is 60%, with aromas of juicy peach and banana rising to the nose. The palate is fresh and balanced, light and sparkling with fruity notes and a hint of citrus fruit and honeydew melon.
