It is a very old grape variety, a cross between Catarratto and Zibibbo, which produces a wine with a concentrated aroma and complexity. In Regaleali, Grillo is grown on the hill next to Case Vecchie. We play with different harvest times here: One part is harvested earlier to give freshness and minerality, the rest later to give structure and body. It's like a fairy tale, "Once upon a time...", and it still exists: the "Horse of the Fairies", "Cavallo delle Fate".
