Only a few varieties react so strongly to pruning. If many shoots are left standing, there is an abundance of thin wines; if they are cut back courageously, the winemaker is rewarded with concentrated and dense wines that can even be matured in barrique. Emmich's Dornfelder does not deny the barrique, the wood notes are beautifully interwoven with the rich plum fruit, everything is soft and velvety.
