The wine is deliberately kept in the great tradition of Burgundy. The moderate alcohol content of 13.5%, the use of the right barrels to avoid any overwooding and to emphasize the Burgundian style, is more akin to foil fencing than a sabre. The wine remains delicate and elegant, thanks to low yields and selective harvesting. The Elementum is a charming Merlot that really comes into its own when paired with food.
