The grapes come from the southern slopes in Pfaffstätten and from the vineyards in Tattendorf. Through very gentle processing, the must obtained is put into barrique barrels, where it can then ferment in peace at a higher fermentation temperature. After fermentation, the Chardonnay remains on the yeast in the barrels and is stirred every 2 weeks. Furthermore, our Chardonnay undergoes malolactic fermentation until the following spring. Only in April the Chardonnay is then for the first time desulfurized and removed from the yeast. Through this very long storage without sulfur and on the yeast, the wine becomes very dark yellow in color and very creamy and full-bodied on the palate.
