At the end of May to the beginning of June, we go after the Douglas fir with our shears and cut the tender young shoots before the forest dwellers discover this delicacy for themselves. Based on old apple and pear varieties, we combine sloe and blackcurrant with the fresh-smelling shoots of the Douglas fir.
