2022 Feudo Arancio Passiari

This great wine consists of 75 percent Syrah, which is grown in the south-west of Sicily. The mild climate and fertile, loamy soils there give the wine strength and structure. The remaining 25% of the wine is Nero d'Avola, which is grown in south-eastern Sicily. Here, the warmer climate and the light, sandy soils produce exceptionally fruity grapes. After harvesting, the Nero d'Avola grapes are immediately taken to special drying floors and gently dried for 60 days. The Syrah grapes are harvested towards the end of September, when they have developed perfect ripeness, aroma and polyphenol content. Fermentation on selected yeasts takes on average 10-12 days, at a temperature of 25-27 degrees, with regular pumping over. Half of the Syrah is then stored in oak barrels for 6-8 months. The Nero d'Avola is harvested around mid-September and dried for 60 days. The stems are then removed, the grapes are gently pressed and selected yeasts are added to the must at a temperature of 25 degrees for 15 days to start the alcoholic fermentation. This maturation takes place in steel tanks. At the end of the maturation period, the two wines are blended and refined for a further 6 months in steel tanks before the wine is finally bottled. Color: Deep brown-red. Bouquet: Expressive, spicy aromas of blackberry and blackcurrant. Taste: A full-bodied, powerful red wine with notes of blackberry, blackcurrant and tobacco.

Recommendation: The wine goes perfectly with smoked trout, raw tuna or fresh cheese.
