The grapes are harvested very early to get or maintain the wonderful aroma, acidity and lightness. Very gently, the grapes are processed cool and the resulting must is fermented at cooler temperatures in stainless steel tanks.
Taste: green apple, light pepper and a hint of flowers, subtle acidity.
