The red wine tradition of the Kloster Eberbach winery dates back to the founding years of the former Cistercian abbey. Thus, in the 12th century, the monks probably brought the sophisticated Burgundy grape from their homeland, Burgundy, and cultivated it in the Rheingau. Already from the 13th century there are reliable sources about the red wine cultivation of Eberbach monastery. In Assmannshausen itself, Pinot Noir has been cultivated since at least 1507. From the year 1740, the cultivation of "Klebroth" predominates on the Höllenberg, as Pinot Noir was called in the Rheingau at that time, and since the 19th century it has been almost exclusively planted with the demanding Pinot Noir grape.

What was initially intended for their own consumption soon developed into a sought-after commodity that secured the future and prosperity of the monastery.
