The grapes come from the Holzspur vineyard in Tattendorf. Only a few grapes remain per vine in order to obtain optimal physiological ripeness. Only when the skin, the seeds and also the stems are perfectly ripe, the grapes are carefully harvested by hand. The grapes are then processed very gently and the mash then ferments in open vats. The mash cake is submerged 1-2 times a day. The maceration time is also much longer and depends on the year and the ripeness. Only the best batches are then divided into 50% new barrique barrels and 50% 2nd filling barrels and then mature for 18 months. Only after this long aging period, all barrels are tasted and only the best are blended for this wine.
Taste: expressive aroma of raspberries, finesse rich, soft melting, powerful on the palate, elegant finish.
