The pruning shears - shape our vines during winter pruning and are used in summer to pick the ripe grapes. Our family has been taking care of our vines for three generations to ensure that they produce unblemished fruit.
It is a skin maceration/carbonic maceration wine, which means that, unlike most conventional white wines, fermentation takes place on the skins and has the character of this process. The fruit is harvested by hand and cooled overnight in a refrigerated room. Around 60% of the grapes are filled into concrete tanks, partly as whole bunches and partly destemmed. Some of the juice is pressed and passed over the grapes to start fermentation. Towards the end of fermentation, some of the juice is drained into old barrels, after which more whole bunches and destemmed grapes are used to fill the tank again - a kind of continuous fermentation. The tank is finally pressed after about 3 weeks.
