Few varieties react so strongly to pruning. If one leaves many shoots, there are plenty of thin little wines, if one cuts back courageously, the winemaker is rewarded with concentrated and dense wines that can even be aged in barrique. Emmich's Dornfelder does not deny the barrique, the wood notes are beautifully interwoven with the rich plum fruit, everything is soft and velvety.
