The fruit was sorted in the field, hand-picked, then pressed to whole bunches, aged in tank for an average of 24 hours, fermented with indigenous yeasts 40% in 600-liter puncheons and 60% in old French oak barriques from different coopers, and aged for 11 months. The complete malolactic transformation took place spontaneously in each barrel. The wines were blended with their lees in tank for five months before bottling.
